Coffee can have an incredible aroma when freshly ground. It also loses it very soon after the grinding due to the process breaking the beans up and exposing them to the atmosphere. When we grind roasted coffee beans, the seal that was formed around the beans from roasting is broken, and the oils and gasses are released immediately. The grinding operation causes the surface area to be increased, and thus the chemical reaction speeds up dramatically. From this process we learn that only just enough coffee should be ground at any one time and the remainder to be well sealed in an airtight container and stored in a cool, dry place. Some places unsuitable for the storage would be warm or hot places like next to an oven or kettle, or cold damp places like in the fridge / freezer.

To conclude, if you are to buy pre-ground coffee, buy only small amounts and keep it in airtight containers in a cool, dark place. However, whole beans are the best way to guaranty freshness of extended periods of time. Whole beans can stay fresh for up to six months and still remain ready for grinding that perfect cup.
