Recipe: coffee scented steamed trout fillets



serves 4
preparation time: 40 minutes
cooking time: 15 minutes

you will need:
500ml of very strong coffee
4 portions rainbow trout fillets
1 pillow pack mixed salad leaves
a handful rosa tomatoes
1 salad onion, thinly sliced
2 yellow plums, quartered
for the dressing:
50g pinenuts, toasted
olive oil 50ml
100ml low fat yoghurt
juice of 1 lime
1 teaspoon hot English mustard
fresh salt and pepper

here’s how:

  • Bring coffee to a boil in a pot.
  • Lightly salt the trout fillet and place in a steamer and place the steamer on top of the pot.
  • Steam for 10-15 minutes, or until desired rarity.
  • Mix together the salad leaves, tomatoes, onion and plums.
  • Crush the pinenuts and mix with the oil, yoghurt, lime juice and mustard.
  • Add salt and pepper to taste.
  • Place the salad on a plate and top with the trout. Drizzle the dressing over.
