Recipe: coffee cured beef carpaccio

serves 4
preparation time: 10 minutes (plus 4 hours to cure and time to freeze)
you will need:
1 whole Free Range beef fillet
500 g salt
500 g sugar
100 g coffee powder
20 ml ground cinnamon
10 ml ground black pepper
here’s how:
- Mix the salt, sugar, coffee, cinnamon and pepper together well.
- Line the base of a rectangular container with some of the curing mixture, place the meat on top and cover with the rest of the mixture. Make sure the whole fillet is covered.
- Place the container in the refrigerator and leave for 4 hours.
- Remove the meat from the cure, brush off any excess salt and wrap tightly in cling film. Place in the freezer to harden overnight.
- Slice very thinly and place on a serving plate with rocket and parmesan.
- Alternatively, don’t freeze the meat; slice the fillet into 4-5 portions and sear. Serve with a rich sauce. (eg. red wine sauce)
